Margarita Jell-O

The other day I was at Wal-Mart cruising the isles as fast as I could so I could get out of that place.  Wal-Mart is always packed and given the fact I live in the sticks I can't hardly stand to be there.  It is too congested for my liking, but it is a dirty job and I am the one in this household that has to do it.  I was making my lap down the adult beverage isle and spotted these.


Of course I thought I better try these new Jell-O varieties......so it was the names of the Jell-O that sold me on it.

So far I have made the margarita Jell-O.  I followed the recipe on the box for the non-alcholoic sparkling ice recipe.  Here it is:

1 Cup boiling water
1 pkg. (4 serving size) Jell-O brand margarita flavor gelatin
1 Cup carbonated lemon-line beverage
1/2 tsp. grated lemon peel
2 tbsp fresh lemon juice

Stir boiling water into dry gelatin in medium bowl at least 2 min. until completely dissolved.  Add carbonated beverage, lemon peel and juice.  Stir until well blended.  Pour into a 9 inch square pan and cover.

Freeze 3 hours or until firm.  Remove from freezer and let stand 10 minutes at room temperature.

Beat with electric mixer on high speed in medium bowl until smooth.  Spoon evenly into 6 dessert dishes.  Serve immediately or store in freezer.  Makes 6 servings.

It is a cool and refreshing treat, but I thought it was missing a little something.......


Ahhhhh, much better.  The tequila made it much more like a smoothie consistency and I was able to drink it with a straw.


 PERFECT!!!!!!!  The only problem is I only bought 2 packages of Margarita Jell-O.  WHAT WAS I THINKING!!!!  I wonder if they will sell Margarita Jell-O in a "6 pack"?!?!
