If you decided to go to the lake maybe you can make these muffins to take along. When my family goes to the lake we take enough food for an entire month....and then worry that we are not going to have enough food for the 3 days we are there. I think this problem is genetic.
Roasted Bananas
6 large ripe bananas, sliced into halves
3 Tbsp cold butter, cut into pieces
2 Tbsp brown sugar
Preheat oven to 425. Place sliced bananas into a baking dish. Place butter evenly over bananas and sprinkle brown sugar on top. Bake for 25-30 minutes or until golden and bubbly. Remove and let cool for 10 minutes. Dice or mash for recipe.
Muffins
6 ripe and roasted bananas
4 large eggs
1 ½ C unbleached all-purpose flour
1 ½ C whole wheat flour
1 1/4 C granulated sugar
2 tsp. baking soda
2 tsp. ground cinnamon
2 tsp. pure vanilla extract
1 C cold peanut butter
2 C mini chocolate chipsFor topping
2 Tbsp. white sparkling sugar
1/4 tsp. ground cinnamon
Preheat the oven to 350. Spray muffin pans or place liners in jumbo muffin pan.
In a medium mixing bowl, mash the bananas. Add the eggs, sugar and vanilla and stir well to combine. Add the flour, baking soda, cinnamon, and stir to mix. Add chocolate chips and stir to combine. Add cold peanut butter gradually by spoonfuls and gently stir (I like the peanut butter to be swirled in and not completely mixed in...make sense??) Scoop the batter into the prepared pans, and set aside.
In a small bowl, stir together the topping ingredients. Sprinkle the mixture evenly over the batter in the pan.
Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let cool.

And I left it at that. We will see if he eats them the next time I make them!!!!

I also need to call my husband right now and ask him to pick up 2 more bananas! I had 6just an hour ago! The baby ate them - if I had seen your comment first that poor baby would have had no bananas!
