Fresh Pumpkin Bread

Since it is fall and since I am in the baking mood and since I have a lot of pumpkin I have been making my favorite pumpkin recipes...whew!!!  I also may or may not have snuck some pumpkin in a few sauces....shhh don't tell my kids...trust me....a couple of my kids wouldn't eat if they knew I put some pumpkin in their spaghetti sauce.  Anyone else sneak veggies in like that?

This morning I made Fresh Pumpkin Bread!


Here is the recipe:

3/4 Cup Sugar
1/2 Cup Packed Brown Sugar
2 tsp. Vanilla
1 Cup Fresh Cooked Pumpkin
2 Eggs
1/4 Water
1/4 Cup Oil
1/4 Cup Applesauce
2 Cups All Purpose Flour
1 tsp Baking Soda
1 tsp Pumpkin Pie Spice
1/2 tsp salt

Preheat oven to 350 degrees.
Combine sugar, brown sugar, eggs, vanilla, pumpkin, oil, and applesauce.  Combine flour, baking soda, salt, and spice together.  Slowly mix dry ingredients into pumpkin mixture and combine.  Pour into a greased bread pan and bake for 75 minutes.

  2. Ooooo . . . I need a good pumpkin bread recipe. Just used up all the puree' from last year's harvest and am getting ready to freeze this year's harvest! Can't wait to try this one! And I'm excited to see you at HVFH. (:

  5. A clam bake sounds like a ton of fun! Beautiful bread. I can't wait to go buy some pumpkin now so I can make it too.
