Fruit Pizza

Wow, it's been awhile since I've blogged....

The other day my sister in law called and asked for my fruit pizza recipe.  She made individual ones for my nephew's preschool class using a single sugar cookie.  Needless to say, she said it went over well with the kiddos had several moms request the recipe.  So here I am to share with all of you!!!

The joke is that the secret is in the sauce.  It's not really a joke because the sauce adds some extra deliciousness to it.  Most of the time I double this recipe because I take it to family dinners and pot lucks....Who doesn't love a pot luck!!!!!



The Recipe (can be doubled)

1 Tube Sugar Cookie Dough
1 Brick of Cream Cheese
3 Cups powdered sugar
4 Ounces of Cool Whip
1 tsp Vanilla

1 15.25 Ounce Can of Pineapple Chunks, drained reserving the pineapple juice for sauce
1 tsp Sugar
1-2 tsp Cinnamon
1/4 Cup Cold Water
1 Tbsp Corn Starch

Lemon Juice
Fresh Fruit of choice, diced
(I use, 1 diced banana, 1 diced apple, 1 cup of grapes, 1/2 cup of blueberries, 1 cup sliced strawberries,  2-3 diced kiwis, 1 15.25 ounce can of pineapple chunks)

Preheat oven to 350 degrees.  Press sugar cookie dough out on a 9x13 cookie sheet.  Bake according to package directions (usually 8-10 minutes), or until dough is done.  Remove from the oven and allow to cool completely.

Dice fruit and place in a bowl.  Add canned pineapple chunks.  Drizzle Lemon Juice over the top and mix fruit together.  Set aside.

Mix cream cheese, vanilla, powdered sugar, and cool whip in a mixing bowl until well combined.  Spread cream cheese mixture on cooled cookie dough crust. Placed diced fruit on top of the cream cheese mixture.

For the "secret sauce"... Whisk corn starch and cold water together in a glass, set aside.  In a pan, heat the pineapple juice, sugar, and cinnamon until it starts to boil.  Remove from heat and stir in the water and corn starch mixture until the sauce is thickened.  Allow sauce to cool and pour over the fruit.  Serve it up and ENJOY!
