Fabric Covered Photo Mats

I had fun dressing up some old photo mats.  You can take those boring white or cream colored photo mats and simply spice them up with fabric to match your decor.  If you don't have fabric I am sure decorative scrapbook paper would work too.

If you don't have a photo mat I will show you how to make your own from supplies you probably have in your cupboard.

I shared my Southwest Quesadilla Burger recipe and now I want to share the delicious tortilla recipe too.  If you have never tasted fresh tortillas you are missing out.  So go grab a few ingredients and whip up some....or maybe I should say roll some out!!!

Another Pioneer Woman Cookbook Giveaway

Thank you to my awesome followers!!!  I mentioned on The Farmer's Wife Facebook page that once we hit 400 Likes on Facebook I would do another giveaway.  Well, we hit 400 and well beyond!!!  To say THANK YOU, I am giving away the first cookbook from The Pioneer Woman!!!

I love her first cookbook, especially her homemade Ranch Dressing recipe!!!  She offers up amazing down home recipes with TONS of pictures which only makes my mouth water even more!  Along with the recipes, she includes pictures and stories from her life on the ranch.  It is a cookbook, but I read it like a book from the front to back.  I love it, and I want YOU have one too!!!

Southwest Quesadilla Burger

Here is a little twist on the old fashioned hamburger!  
The Southwest Quesadilla Burger is housed in a flour tortilla and topped with pepper-jack cheese, lettuce, pico de gallo, and a succulent southwest sauce.  YUM-O!!!

Lets start with the pico de gallo shall we.  You will need 1/2 of an onion, 3-4 tomatoes, a jalapeno, a lime or lime juice, dried or fresh cilantro, a glove of garlic or minced garlic, and some salt and pepper.

Chop the onion.

De-seed the jalapeno if you don't want your pico de gallo too hot.  Then chop.

Mince the clove of garlic or use about 1 teaspoon of minced garlic.  I was out of garlic cloves when I made this {eeek}.

Combine the chopped ingredients.  Add 1/2 tablespoon of cilantro.

 And some salt and pepper to taste.

Add about a tablespoon of lime juice and stir.  Place in the refrigerator to chill.

Moving on...the Southwest Sauce.

You will need:
16oz tub Sour Cream
1/4 tsp.  Salt
1/2 tsp. Ground Cumin
1 Tbsp. Cilantro
1 tsp. Chili Powder
1/2 tsp. Minced Garlic
1/8 tsp. Cayenne Pepper
1/2 tsp. Crushed Red Pepper {I used Peppercorn Medley}
2 Tbsp. Lime Juice
Tabasco to taste

Add all the ingredients to a bowl.

Give it a good stir to combine the seasonings with the sour cream.

Then add Tabasco sauce to taste.  I'm pretty generous with the Tabasco sauce because I prefer things to have some "kick" to them.

Place sauce in the refrigerator to chill while you make your hamburgers.

For the hamburger, season to your liking and fry or grill.  Add a slice of pepper-jack cheese and allow to slightly melt before removing from heat.  Then heat flour tortillas over medium-high heat until crispy.  I made my tortillas from scratch, but you can use small packaged flour tortillas. 

Top your tortilla with the hamburger.  Then add lettuce, the pico de gallo, and the southwest sauce.  Top with another tortilla.  Enjoy!!!

Because I have a love affair with Mexican food I ate this for lunch and supper today....just thought I would share!!!

The Joys of Winter...

It has been so cold here for a couple weeks.  I think we have had a couple days in which the temperature got into the twenties, but it has been single digits most days and negative degree wind chills....brrrrr!!!!  With the non stop-freezing temps that brings on a lot of chopping ice for the cattle so they can drink.  Chopping ice, a winter joy on the farm...ha!!!

I decided to tag along this morning while my hubs and our hired man did chores.  It was so pretty outside because it snowed ALL day yesterday and the earth was covered with a sparkling white blanket of powder this morning.  The trees were covered in frost that was fluttering to the ground like confetti!  I love that I get a wide open view of it all!!!

Not only was the ground cover amazing, the sky was phenomenal as well.  I snapped a few pictures on my phone to share with you!

We {I use that term loosely} chopped ice and chopped more ice.  Today my hubs decided to get all the ice out of the tanks since they were mostly empty.  Some days we { hubs} just chop a couple holes so the cows are able to drink.  So after chopping all the ice up we {I'm so glad I was such great help} threw all the big chunks of out of the tanks.  Next to each of our stock tanks it appears as though there are Eskimos living there because the piles of ice resemble an!

When it is so cold like this, I try to remember what it will be like in the summer with 115 degree temps with all the yucky humidity so I can tolerate the cold, but that doesn't always is still COLD!!!
